Paladins and Warriors are both really good at tanking, it’s hard to choose.
Paladins can heal themselves (bubble and heal in a jam), give buffs, cleanse diseases/poisons/curses, Warriors don’t have that ability, so going Paladin could make it easier to level than going Warrior.

I think Pallys are a little more desirable when it comes to end game raiding atm, they have superior AoE tanking ability (especially since there are so many undead mobs in wrath) to warriors (who are great with single target threat). Pallys are also easier to level so you’ll reach 80 faster.
As for horde vs alliance, that really only matters if you plan to pvp and then it depends somewhat on what battlegroup your server is part of (though I think horde is generally better at pvp). I would go with whichever faction your original 80 was with, just to make leveling faster.
You’ll have to look at this at both points of views,1st off Paladins can heal,tank,dps and can solo pretty much anything but a whole dungeon them selves(not counting farming when your 80 i.e farming low lvl dungeons) also the paladin class get a free mount but at a higher cost for their abilities then comes the specing & professions(not going to get into that) now the warrior class is nice but they lack the healing abilities that the paladin has and the rely a lot on what gear & weapons they have but when soloing the warrior class is a lot of fun I just started to lvl both a warrior & a paladin right now the warrior is 33 and the failadin(lols) is 21 i have to say i have more fun playing the warrior class than i do the paladin but over alll its your choice to lvl or play what you want
