Skinning, haven’t played in awhile but skinning at its top rank gives you a +50 crit strike rating.
If you want to go into leatherworking for the $$ or just for yourself thats fine as well. Though if not going into LW get herbalism (healing spell bonus) or mining (stam bonus)
Honestly I think herbalism and alchemy because they go well together and rogues have no way of healing themselves. But I suggest asking in a Guild or General chat on the game if you want more than 1 answer.
