Just starting another charactor, I used to play alot so i know the quests which will make leveling alot more easier. I want to level as quickly as possible so..Mage or Warlock? I would say Warlock would be the fastest leveling and either Affliction or Demonology. Mage would be more fun end game though with pvp and raiding. Good proffessions would be mining and jewelcrafting, takes time to level up but soooo worth it to make epic jems and sell in the AH.
Personally mages can be more intreseting to play. But it depends if you want to level PvP or PvE. Both of them are good in PvP but I would say warlocks have more pow in PvP. Warlocks are slower leveling in PvE but more fun than mages. Mages are very easy to level frost in PvE and I found it very easy to play both PvE and PvP. But try them both out as they are both enjoyable.
